Without the cap, you will get an annoying gurgling sound, like water going down a drain, it is all explained in the link to the durso page. The hole in the cap is to regulate the amount of air drawn in, without the whole, the water level will surge up and down, occaisionally sucking dry below the tee section, making a very loud sucking noise. If you put a largish air valve on the top of the cap, you can adjust the amount of air that can be drawn in without having to play with the size of the hole.
